What can you make for dessert for a bridal shower, tea, dinner party, luncheon, office party, baby shower, ….and just because?
Cream Puffs with Mocha Filling, of course.
These are so delicious that you simply won’t just stop at one. I use this pastry recipe for sweet and savory fillings and today I’m including an easy to make mocha cream filling….raves all around.
Start by making the cream puff pastry…pate a choux in French. (This recipe makes 24 three-inch puffs.)
Cream Puff Pastry
In a large saucepan, bring to a boil
1 c. water and 1/2 c. cold butter cut into 1 inch cubes (no tub margarine, please)
Remove from heat and beat in
1 c. white flour, 1 tsp. baking powder, 1/4 tsp. salt
Return to low heat and beat with a wooden spoon until the mixture leaves the sides of the pan…1 to 2 minutes.
Remove from heat and allow to cool for 5 minutes.
Beat in 3 large eggs, one at a time, beating well after each addition. Each tiime you add an egg, the mixture appears to separate and go all gooey…(see the picture)…but just keep beating and it will all come together.
Spray a baking sheet with Pam, (or lightly grease with butter,) and drop the mixture by large tablespoonsful keeping about 1 to 2 inches between them.
Preheat oven to 425 degrees. Bake the puffs for 10 minutes, reduce heat to 375 degrees and bake 15 minutes more or until they are golden brown.
Poke the side of each puff with the tip of a sharp knife to let the steam escape and bake 3 minutes more so they will dry out in the middle.
Transfer to a wire rack to cool.
Mocha Cream Filling
Chill a large glass bowl and the beaters…I usually put them in the freezer for half an hour or so. Add the following ingredients and, using a wire whisk or electric mixer, whip together until very stiff. Cover and refrigerate.
2 c. heavy whipping cream
3 tbsp. cocoa powder
4 tbsp. icing sugar
1 tsp. vanilla
1 tbsp. cold strong coffee
Up to 2 hours before serving, cut the tops off the puffs, fill each with 2 heaping spoons of mocha cream, replace the top, cover and refrigerate.
Just before serving, sprinkle with a dusting of icing sugar and voila! That’s all there is to it and you will be treating your friends with a delightful pastry that they will talk about for days.
